1) It is an amphisbaena. There are many species of amphisbaenas, they are all lizards that have no limbs. This is the Mexican mole lizard, it is the only amphisbaena with 1 pair of limbs.
2) It spends most of it's life under the ground. Therefore, it kinda has no pigmentation. No pigmentation = pink/white color.

This creature is called bipes or Mexican mole lizard. It is a member of a group of lizards called "amphisbaenas". Basically, these lizards and snakes went through what is called "convergent evolution" which is a situation when different animals independently evolve similar traits.
What I want to say is that they are lizards that look almost exactly like snakes. They are long & have no paws. However, bipes is slightly different. Unlike other amphisbaenas, they still have their front pair of paws.
